Our first apprentice Lynne started us off. She came to us to learn about wood fired ovens and she taught us a lot about baking, including how to stay sane by taking on more help. Out of her stay was born our informal apprenticeships.
Our apprentices come for between 6 weeks and two months. We provide board, lodging and share all we have learned about sourdough and they help us bake the bread and make the cakes and staff the markets. We have found we have learnt as much from our apprentices as they have from us. All our apprentices have gone on to professional baking jobs. Alex set up his own award-winning bakery - East Bristol Bakery and Phil is already on the way to establishing his. Our apprentices have come from the UK, France, Spain, the US and Canada. WWOOF is a fantastic international organization providing learning experiences, meals and accommodation for travellers. We take on about 20 Woofers a year for two-three weeks at a time and they help in the veg garden, with the wood for the oven, with pizza nights and with the markets. There 's also a fair amount of washing up! You need to join WWOOF to visit with us and we get booked up quite well in advance particularly in the Summer. WWOOF
